Ingredients for 4 people

  • 1 tablespoon olive oil
  • 2 cloves of garlic, pressed
  • 2 onions, coarsely diced
  • 250 g caviar lentils
  • 1 large potato, coarsely diced
  • 1 large glass of white wine
  • 1 bunch of bay leaf and thyme
  • 2 meat stock cubes
  • water
  • 1 ripe tomato, quartered
  • Morcilla (black pudding), chorizo (sausage) and bacon (In most Catalan supermarkets, these are available in a pre-made 3-pack; alternative: spicy sausage with chili).
  • 4 small sprigs of wild rosemary

Caution: do not add salt to this dish!

Preparation

  1. Heat the oil in a deep saucepan.
  2. Add garlic and onions and sweat for 5 minutes.
  3. Add lentils, potato, wine, herbs, bouillon cubes and enough water to cover everything by at least 5 cm.
  4. Bring to a boil, then reduce heat and simmer, covered, for 30 minutes.
  5. Remove the lid, increase the heat and simmer until the lentils are just tender.
  6. Add the tomato and place a lid on top.
  7. Cut the morcilla, chorizo and bacon into thick slices and fry them in a dry pan. When they are cooked, add the rendered oil to the lentil stew.
  8. Finally, arrange the lentil stew in a bowl, garnish with meat, tomato and rosemary sprig.
